Violations:
A summary of the violations found during the inspection are listed below.

508   Adequate equipment/facilities available for sanitary maintenance (Sec 17(3))
Observation: The dishwasher did not reach 71C during first cycle after a period of 15 minutes; it took 4-5 cycles before unit was approaching 71C.
Corrective Action: Ensure that at least 4 cycles are run empty prior to use to allow temperature to reach 71C. Also have the unit serviced.
511   Cold holding equipment is able to maintain a temperature of 4 degrees C. or lower (Sec 19(1)(b))
Observation: The line cooler was not working at time of inspection. Operator was already aware of the problem and has taken corrective actions to temporarily resolve the issue by means of ice, reduced stock and frequent rotation. The unit has also been serviced and repairs are expected to be complete before the weekend.
Corrective Action: Monitor food temperatures closely to ensure they are not above 4C until the unit is repaired.

- Backflow prevention devices require testing.
- Lids on dry storage bins need to be replaced.

General Observations:
- Hand sinks supplied with liquid soap and paper towel.
- Sanitizing solution available for food contact surfaces.
- Bar glass washer tested adequate sanitizer in rinse water.
- General sanitation of premises is acceptable.
- Food storage is acceptable - all items covered and dated.
- No signs of pest activity were noted during today's visit.
- All temperatures met regulatory requirements (except as noted above).
