A summary of the violations found during the inspection are listed below.

402  Critical Repeat Food is protected from contamination (Sec 12(b))
Observation: The food storage practices in the upright cooler has not been changed since the last routine inspection. No designated storage space observed for the raw meats.
Corrective Action: Store raw meats on the bottom most shelf of the upright cooler to eliminate any chances for food contamination from the dripping meats.
505   Food premises maintained in a sanitary condition (Sec 17(1))
Observation: No improvements observed in the general cleanliness in the facility. Excessive grease and food debris observed underneath the sinks, dishwashing machine, cooking area and front sushi preparation area.
Corrective Action: Clean the floor and walls throughout the premises including all hard to reach areas. This is an uncorrected violation.
507  Critical Repeat Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: The dishwashing machine is still not providing any detectable sanitizer. Manual sanitation of the dishes is not being done.This is an uncorrected critical violation. A $230 violation ticket being issued to the operator.
Corrective Action: Repair the dishwashing machine to get 50 ppm chlorine in the final rinse cycle. Until the machine is repaired, all the dishes and utensils must be manually sanitized in 100 ppm chlorine solution after running through dishwasher. Failing to repair the dishwasher within 1 day from the date of this inspection may result in further enforcement action from this office.
706   Repeat Operator has written procedures for safe and sanitary operation (Sec 24 (1))
Observation: The written sanitation plan is not available/implemented.
Corrective Action: Provided an update written sanitation plan as requested in the last routine inspection report. Failing to provide an acceptable sanitation plan carries $230 fine.

Comments:

Follow up inspection.

The following item from the last routine inspection has now been corrected>
- The sushi display cooler is running at less than 5 degree Celsius at the time of this inspection. No thermometer has yet been provided in this display cooler.

All other violations remains uncorrected.
- An additional freezer has not yet been provided. The target completion date for providing additional freezer is 15th April, 2013.

Violation ticket of $230 being issued ( to be served on a later date) for failing to maintain sanitary premises/equipment/utensils.
