Observation: Sanitizing rinse for dishwashing not at proper temperature (82ºC /180ºF) - 1.final rinse measured at 68C internal and should be >72C internal temp. 2.temperature gauges on dishwasher not working. (same Violation noted 06/02/2004)
Corrective Action: 1.Have dishwasher repaired immediately! For now, spray dishes with sanitizing spray (200ppm QAC spray available at time of inspection), hold 2 minutes, air dry. 2.Have temperature gauges repaired immediately! Order hot holding thermometer and record temperature of final rinse.

Corrective Action: Submit payment for Permit fees immediately.
113   Improper Sanitary Facilities
Observation: Inadequate handwashing facilities at handbasin in bar area - liquid soap and paper towel are available, but paper towels not in a wall-mounted dispenser.
Corrective Action: Handbasins must be kept clean and supplied with liquid soap and paper towels at all times during operation. Please provide wall-mounted paper towels for handwashing at handbasin in bar area.

Observation: 3.Light covers missing in food prep area.
Corrective Action: 3.Replace missing light covers in food prep area.

108.Wiping cloths stored in 200ppm QAC sanitizing solution in food prep area and bar/service area - also spray bottle with 200ppm QAC available for use.

Other areas noted at time of inspection.
-general maintenance is good!
-liquid soap and paper towels available for handwashing in food prep area and bar/service area (*see 113 above) = good!
-all refrigeration <4C=good! / freezers <-18C=good!
-Permit on display in view of public = good!


25/02/2006 at 2pm - confirmation from Operator that dishwasher is now operating at required temperatures and gauges functioning.
01/03/2006 - confirmation from Operator that ventilation system has been professionally cleaned.
09/03/2006 - payment of fees received.
