Observation: The polythene bags meant for garbage are being used to store food.
Corrective Action: Please use food grade bags to store food.
113   Improper Sanitary Facilities
Observation: The paper towel dispenser on the hand washing station is not operational ( Paper towel is available)
Corrective Action: The paper towel dispenser should be repaired.
116   Improper Construction / Maintenance of Establishment
Observation: The inside wall of the line coolers are greasy and in need of cleaning and sanitizing.
Corrective Action: Increase the cleaning/sanitizing frequency of the line cooler.

Observation: Sanitizer test strips not available.
Corrective Action: Please provide sanitizer test strips for chlorine (to test for bleach concentration in 3 compartment sink) and quat (for sanitizer dispenser and spray bottles).
121  Critical Inadequate food safety training - staff
Observation: Only one person has food safe level 1 training.
Corrective Action: Please get a back up staff person certified in Food Safe Level 1 . Target completion date 19 Jan, 2011.

Comments:

General observations:
1. All the temperatures are meeting health requirements.
2. The sanitizer dispenser is providing the correct concentration (>200 ppm) of sanitizer. According to the information provided by the operator all the utensils are washed, rinsed and sanitized in the 3 compartment sink.
3. Relocating the flour bags away from the grill is highly recommended. Please ensure that these food bags are kept at least 6 inches above the floor in order to facilitate cleaning underneath.
4. An application for change of ownership/ Update of information was submitted at time of this inspection.
