Corrective Action: 2. Maintain daily temperature logs for all fridges and freezers. (Temperature logs left with manager).

Observation: 1. Walk-in cooler: Food not protected from potential sources of contamination. Several food containers observed stored on shelving racks placed directly on floor.
Corrective Action: 1. Ensure all foods in walk-in cooler are stored on shelving, at least 6" up off floor (to facilitate daily cleaning of cooler floors, and to provide adequate air-circulation around foods).

Observation: 4. Walk-in beer fridge: worn, wooden flooring is an inadequate flooring surface. Visible build-up of mold and grime on floors, walls, ceilings.
Corrective Action: 4. Walk-in beer fridge requires new flooring, to provide a floor surface that is non-absorbent, light-in colour and easily cleaned. Walls, ceiling and vents must be cleaned, sanitized and maintained in a clean and sanitary manner.

Observation: 3. Ice machine door has broken, cracked surfaces.
Corrective Action: 3. Ice machine door must be repaired or replaced.

Corrective Action: 2. Bare, wood shelving must be painted/finished, to provide a surface that is non-absorbent, easily cleaned, and light-in-colour.

Corrective Action: 1. Repair or replace flooring behind bar, in areas where worn. Seal at counter/wall joins to prevent the collection of dirt and debris in gaps.

- Refrigeration temperatures recorded at 4C, or below = good.
- Freezer temperatures recorded -16C = good.
- Liquid handsoap and paper towels available at handwash stations = good.
- Dishwasher sanitizing rinse maintained at 180F = good.
- Clean, wiping cloths stored in Quats sanitizing solution = good (maintain at 200pm quats)
- Walk-in cooler: foods covered/ raw meats stored below produce and ready-to-eat foods = good.
- Iodine sanitizing solution rinse used in bar glasswasher.
- Staff friendly, cooperative and knowledgeable - thanks.
- New handwash signs left with manager.
