Observation: The walk in cooler is running at 10 degree Celsius. No temperature logs being maintained.
Corrective Action: Relocate all the potentially hazardous items to the other available refrigeration space. The walk in cooler must be repaired immediately. Please note that this is a reoccurring critical violation. Failing to regularly monitor the refrigeration temperature in future may result in a violation ticket. Target completion date - Immediate action required.
110   Food Not Protected - General
Observation: 1. Both raw meats and ready to eat foods are being stored together on the same shelf in the upright freezer. 2. Garbage bags being used to wrap the food items. 3. Some bakery items on the front counter are displayed without proper wrap/sneeze guard. 4.Observed a clean dish rack being stored on the top of the garbage container.
Corrective Action: 1. The raw meats must be stored away from the ready to eat meats on the lowermost shelves to avoid contamination of ready to eat foods. 2. Please use food grade material to wrap the food. 3. All the displayed foods must be protected by a sneeze guard or wrapped appropriately to protect from contamination by the customers. 4. Dish racks must be stored in a clean place.

Comments:

General observations:
The dishwasher is sanitizing at more than 71 Degree Celsius at the dishes.

The operator to contact the refrigeration repair person immediately.
All the violations related to the general food protection must be addressed immediately.
The operator to save the ingredient list/nutritional information labels for the frozen croissants to comply with the Trans Fat Regulation.
