110   Food Not Protected - General
Observation: There is no detectable sanitizer in the sanitizer bucket. The sanitizer dispenser is providing the correct concentration of 200 ppm quat solution.
Corrective Action: The sanitizer levels must be tested every time the sanitizer bucket is filled. Please ensure that all the employees are aware of the correct procedures to fill and use the sanitizer solution.
120  Critical Inadequate food safety training - operator/manager
Observation: No one on the staff has food safe level 1 or equivalent training. The target completion date of Dec 17th, 2010 has passed but neither the manager nor any staff has registered for Food Safe Level 1 course. A violation ticket of $ 230 is being issued for this uncorrected violation.
Corrective Action: All the shift managers must immediately register for the next available Food Safe Level 1 course. Target date for completion of the course 19th January, 2011.

Comments:

All the temperatures are meeting health requirements. The temperature logs are being maintained. The operator is advised to maintain the temperatures records in the DQ temperature charts to avoid any mistakes.
