Observation: There is no indication of when the backflow prevention assembly for the ice machine was last tested.
Corrective Action: Have the device tested annually by a qualified person and ensure testing tags are attached to the assembly for verification.

Observation: Unwrapped baked items were observed on the bar.
Corrective Action: All baked items must be protected from contamination (e.g. individually wrapped or using a bakery dome).

Observation: Trays of meat were observed on the floor in the walk-in cooler.
Corrective Action: All foods must be stored on shelves at least 6 inches off the floor. Some recommendations were made during inspection including addition of an extra layer of shelving to accommodate trays of meats on the bottom of existing shelving units.
404  Critical Hot potentially hazardous foods are stored or displayed above 60 degrees Celsius (Sec 14(2))
Observation: Mashed potatoes were observed at 32C and through discussion, it was discovered were not properly re-heated before transfer to hot holding.
Corrective Action: Reheat foods to 74C before transferring to hot holding and ensure foods are kept above 60C while hot holding. Mashed potatoes were discarded at time of inspection.
502   Equipment/utensils/food contact surfaces are durable/easily cleaned/ & free from toxic substances (Sec 16(a)(ii))
Observation: The slider lid of the reach in freezer is in poor condition and is currently held together with duct tape.
Corrective Action: All equipment must be easily cleaned. Repair or replace slider lid.

Observation: The racks in the walk-in cooler are crusty with food debris. Many surfaces are also rusted.
Corrective Action: Racks require a thorough cleaning and should be re-finished so they are easy to clean (e.g. durable paint).

Comments:

General Observations:
- All refrigeration temperatures met regulatory requirements.
- Thermometers noted in coolers.
- Temperature logs are maintained on a daily basis.
- Quaternary ammonium sanitizing solution for food contact surfaces was tested at 200ppm.
- Dishwasher final rinse temperature measured >71C.
- Glass washer final rinse tested 12.5ppm iodine.
- Foodsafe trained staff were on site at time of inspection.
- Premise has a pest control program in place, no signs of pest activity were noted.
- Premise appears clean and sanitary.
- Equipment appears to be in good working order.
- Hand washing station is equipped with liquid soap and paper towel.

Violations corrected from previous inspection reports:
- Concrete flooring in the back kitchen has been painted.

Future upgrades required:
- Kitchen floor tile will need new grout within the next 12-18 months.
