116 | Repeat Improper Construction / Maintenance of Establishment Observation: As noted on the previous inspection, there is an excessive build-up of food debris and grease in a number of areas in the main (back) kitchen. Corrective Action: A thorough and regular cleaning is required in the kitchen area. In particular, the hard-to-reach areas such as under the coolers and cooking equipment, around the dishwasher and the handsink must be cleaned. An improvement in the general cleanliness must be completed by March 9, 2007. |
Comments:
The coolers that were noted as not maintaining proper temperatures during the previous inspection have been serviced and are now maintaining food temperatures below 4 degrees Celsius - good.
