A summary of the violations found during the inspection are listed below.

403  Critical Cold potentially hazardous foods are stored/displayed at or below 4 degrees C (Sec 14(2))
Observation: One of the line coolers near the cooking line running warmer than 4 degree Celsius. The temperature record shows that this cooler was running below 4 degree Celsius in the morning. It appears that the proximity to the cooking line or constant opening and closing is affecting the temperatures in this cooler. The operator is aware of this issue and as per information provided by the manager this problem has been identified in the recent internal audit.
Corrective Action: Repair or replace to cooler to ensure that it runs below 4 degree Celsius all the time. Start recording temperatures of this cooler during busy period. Do not store anything in the lower part of this cooler if running in the danger zone.

- Except otherwise noted in the violation section, all refrigeration units are running 4 degree Celsius or below.
- Freezers running -18 degree Celsius or below.
-Thermometers provided in all the cooling units.
- Hot holding temperatures > 60 degree Celsius.
-Temperature logs and cooling time charts being maintained.
- No signs of any pest infestation.
- Mechanical dishwasher and mechanical glass washer in the kitchen are providing >50 ppm chlorine in the rinse cycle.
- Mechanical glass washer in the bar is providing more than 12.5 ppm iodine in the rinse cycle.
- Foodsafe certified food handlers available.
- Hand washing facilities are satisfactory.
- General maintenance is satisfactory.
- Permit posted.
- General maintenance is satisfactory.
- No concerns identified with the food handling and storage practices.

The following items from the previous report has now been corrected:
- Unnecessary equipment has been removed from the dry storage room.
- Soap and paper towel provided on the bar hand sink.

Note: This facility participates in informed dining program but not in compliance with the program standards at the time of this inspection.
