Observation: A thorough cleaning is required in hard to reach areas on the walls, ceilings and on hard to reach areas on the floor.
Corrective Action: Thoroughly clean the floors, walls and ceiling in the facility and review your cleaning schedule to include a through cleaning of the facility minimum once a week.

Observation: The dry storage room does not have adequate lighting in one portion of the room.
Corrective Action: Provide adequate lighting in the dry storage room to facilitate proper cleaning.

Observation: Flour bags are stored on the floor in the dry storage room.
Corrective Action: Store any food container on the shelves and minimum 6 inches off the floor. Provide additional shelving if required.
507  Critical Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: The high temperature dishwasher is not reaching 71 degree Celsius on the dishes.
Corrective Action: Repair the dishwasher to get minimum 71 degree Celsius on the dishes. Target completion date within 2 days from the date of this inspection. In the meantime, all the dishes must be manually sanitized in 100 ppm bleach solution after running through the dishwasher.
513   Refrigeration and hot holding equipment has accurate thermometers (Sec 19(2))
Observation: One of the fridges has no thermometer in it.
Corrective Action: Provide accurate thermometers in all the fridges and freezers.
604   Adequate handwashing stations at convenient locations are available for employees (Sec 21 (4))
Observation: The faucet on the hand sink/double sink is broken. This tap has to be turned on from the main knob below the sink.
Corrective Action: Repair the faucet as soon as possible.

Corrective Action: Provide soap on the hand sink. Corrected at the time of this inspection.

- Refrigeration temperatures are 4 degree Celsius or below.
- Hot holding temperature above 60 degree Celsius.
- Freezer temperatures below -18 degree Celsius.
- Foodsafe certified food handlers available.
- No signs of any pest infestation. This facility has a regular contract with a pest control facility.
