Observation: The basement area is used for a variety of tasks including the storage of food products.
Corrective Action: This area has not been granted approval as a general food storage area. This area should now be reorganised to ensure all food products are in a collective area and the floor, wall and floor surfaces are smooth, impermeable and cleanable and there is sufficient light available for cleaning activities.

Observation: The internal areas of the fridges in the more difficult to reach places were dirty.
Corrective Action: These should now and routinely be thoroughly cleaned.

Corrective Action: These areas should now and routinely be thoroughly cleaned.

Observation: Thermometers were not provided in all refrigerators and temperatures had not been monitored and recorded since the 1st July 2008.
Corrective Action: Thermometers should now be provided in each item of refrigeration equipment and in line with good HACCP practices temperatures should be monitored and recorded daily.

Corrective Action: This should now be further cleaned and thoroughly cleaned after each period of use.

Observation: The plastic containers used for storage of tacos were dirty.
Corrective Action: These should now and routinely be thoroughly cleaned.

Observation: There is insulation provided to ventilation ducting provided above the food slicer area which is in disrepair and difficult to clean.
Corrective Action: This should now be sealed/replaced with a material that is smooth, cleanable and impervious.

Observation: Exposed timber surfaces cannot be cleaned effectively.
Corrective Action: Exposed timber surfaces should now be resealed leaving a smooth, impermeable and cleanable surface.

Observation: At the time of the inspection food was being stored on the floor of the walk-in coolers and walk-in freezer.
Corrective Action: To prevent the risk of cross contamination from floor to food contact surface, food should not be stored on the floor.

Observation: No sanitizer was detected in the rinsing water of the glass washer, the take-up tube screen was cleaned and the machine primed for several minutes with no effect.
Corrective Action: This should now be repaired.

Observation: Hot water was not provided at the ladies/staff washroom hand basin.
Corrective Action: This should now be provided.

Observation: The floor drain cover within the kitchen area is blocked with food debris.
Corrective Action: The floor drain should now be flushed to show efficient working and the drain cover now and routinely cleaned.

Corrective Action: This should now be repaired.

Observation: The milk fridge within the bar area has a leak and condensate water is collecting on the bottom surface of the fridge.
Corrective Action: This should now be repaired.

Corrective Action: This should now be carried out leaving a smooth, impermeable and cleanable surface.
