Observation: All potentially hazardous foods are not stored under refrigeration (4ºC / 40ºF or less ).
Corrective Action: Discard high hazard items stored above 40 F. longer that 2 hours. Do not restock unit until serviced or repaired.
Observation: Quats sanitizer solution for food contact surfaces is too weak. Iodine sanitizer container for bar glass washer is empty.
Corrective Action: Mix sanitizer concentration as per instructions on bottle and in accordance with sanitation plan. Check chemical sanitizer containers regularly, have a back up available on site.
Observation: Food Safety Plan Temperature Monitoring not being done; temperature records not kept. Outside barbeque area not approved for food preparation; mechanical refrigeration, a canopy and a handwash station are required.
Corrective Action: Monitor hot and cold holding and maintain written records in accordance with food safety plan. Provide a floor/equipment plan for the outside barbeque area for purposed of plan approval. Stop use of outside area for food preparation purposes until our office has provided written approval for use.
Observation: Both the paper towel and soap dispensers at the handwash sink are broken.
Corrective Action: Repair.
Observation: Effective measures not used to control entrance (rodent and insect proof construction) and harborage of rodents, flies, cockroaches and other vermin.
Corrective Action: Screen door required at back entrance!
