A summary of the violations found during the inspection are listed below.

Observation: The C02 canisters for the pop are not properly secured downstairs next to the walk in cooler.
Corrective Action: Corrected at time of inspection. A heavy chain was provided that secured the canisters into place. Thank you.

Observation: The fan grate at the rear of the backup line cooler next to the dishwasher is loose. The insdie of the fan area contains a buildup of debris as well.
Corrective Action: Clean the inside of the fan grate and attache the cover securely to it to prevent further accumulation of debris.

Observation: No light covers for the lights above the walk-in cooler in the dry storage area.
Corrective Action: Provide light covers (e.g. plastic sleeves) for these lights to protect against shattering.

Observation: Do not cover the handsink at the far end of the bar.
Corrective Action: Ensure that this remains clear so that staff may wash their hands.
504  Critical Equipment/utensils/food contact surfaces are operated in a safe/sanitary manner (Sec 16(c))
Observation: Glasswasher does not dispense detergent or sanitizer due to non-functioning paristaltic pumps on the lines.
Corrective Action: Use the backup glasswasher until the regular one is fixed. Repair company was contacted for service during inspection. Also consider replacing the lines on the backup glasswasher as they appear to be very stiff and may crack soon.

Observation: The dishwasher temperature guage for the rinse cycle does not work properly.
Corrective Action: Either repair the sensor so it shows the proper temperature of the dishwasher rinse cycle or provide an alternate means of measuring this, such as wax temperature strips that indicate that the rinse cycle is working correctly.

Comments:

Temperature logs are well maintained for the facility. All protective temperatures meet regulatory requirements at time of inspection (i.e. coolers, freezers and dishwasher rinse temp). Premises is generally well maintained. Flooring shows some signs of wear but is refinished at a regular interval currently refinishing is not required. Dry storage area above the walk in cooler is finished with easily cleanable materials as per previous inspection
