209 Food not protected from contamination [s. 12(a)]
Observation: (CORRECTED DURING INSPECTION) A uncovered plastic container of cooked udon noodles were placed right below the first sink of the dishwashing area. Contact with or drippings from dirty dishes or chemicals from the dishwashing area could contaminate food and lead to serious illness.
Corrective Action: The container was immediately moved away from the dishwashing area to a counter and processed to be stored in the refrigeration unit.
