Code Description
301Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Dollies were used to store blue plastic containers and to ensure that they are at least 15 cm above the floor. However, surface of the dollies where the blue plastic containers come into contact with were not maintained in a clean and sanitized manner leading to potential contamination of the bottom of the blue plastic container. As blue containers were used to store pizza dough and that blue containers stack on top of each other, this may lead to cross contamination of the pizza dough.
Corrective Action: Clean and sanitize all dollies used to store blue plastic containers as well as blue plastic containers that had been stored on the dolly. Dollies must be routinely cleaned and sanitized to prevent potential cross contamination.
