Code Description
302Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: (CORRECTED DURING INSPECTION) The cutting boards of sandwich prep table were cleaned and sanitized at the end of the operation and they should be cleaned and sanitized every 2 hours as they are food contact surfaces where ready-to-eat sandwiches are made. Every 2 hours or as needed, food debris need to be swept from the boards and collected in the stainless steel table pans underneath the boards and then the boards should be sanitized with Quat spray bottle and be left air dried. Discussed having one designated sanitizing table pan filled with Quat, wiping cloth stored inside can be used to wipe the boards handily with the manager on site.
Corrective Action: The manager brought a Quat spray bottle and a roll of paper towel next to the till machine and stated she will ensure the cutting boards of sandwich prep table along with other utensils (e.g. knives) to be cleaned and sanitized at least every 2 hours.
308 Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Pipes under the three compartment sinks were leaking at the time of inspection. Baseboards behind the sinks were soaked with water from leaky pipes. Long-term water leak may lead to mould growth due to high moisture, it can also attack pest and cause slippery floor (fall risk for staff). Plumbing system should be maintained in good working order to ensure facility maintained in a sanitary condition.
Corrective Action: The manager promised to contact the owner and asked plumbers to fix the leaky pipes in a timely fashion.
