Code Description
302Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Rubbermaid garbage bins were stacked together and stored on the shelf above the dishwasher. Those bins have been used to store foods. Grease, filth and stains have been felt and observed on those bins.
Corrective Action: Rubbermaid garbage bins are not manufactuered to store food directly. Its materials make them cannot be cleaned and sanitized properly. Only containers made from food-grade materials, for example, stainless steel or food-grade plastic can be used to store food directly.
303Critical Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: Neither sanitizing buckets nor sanitizing spray bottles were available on site to sanitize food contact surfaces when needed.
Corrective Action: Food contact surfaces should be cleaned and sanitized at least every 2 hours, before preparing ready to eat food and as needed. Having sanitizing solution available is critical to efficiently sanitize surfaces as needed. Based on the facility's situation, 200ppm bleach solution can be used in either sanitizing buckets or spray bottles.
308 Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Some dry goods storage containers were broken and their lids cannot fit the containers properly.
Corrective Action: Dry goods should be stored in sealed containers when not in use. Containers should be maintained in good working order to prevent pest entry.
