108Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Inadequate QUAT sanitizing solution in 3 sink manual dishwashing. No sanitizer detected. (Public Health significance) - sanitizer must provide a minimum concentration of 200 parts per million (ppm) as required to effectively sanitize dishware. Inadequate QUAT in spray bottles as well. Strips to monitor the solution concentration is available but not used.
Corrective Action: Immediately remake 200 ppm rinse water. Ensure dishes are soak for 2 minutes. Have the automatic dispenser repaired by a qualified technician and monitor and log sanitizer concentration regularly so you know when the unit needs adjustment or repair. Take time to accurately record the concentration of solution.
