103Critical Repeat Food Not Protected From Contamination - Other Sources
Observation: Meat was stored in bins with no lids inside the chest freezers. Inside the walk in cooler, foods were stored in bins on the floor with no lids.
Corrective Action: Keep lids on all foods to protect against contamination. Keep foods stored off the ground to facilitate cleaning. The walk in cooler floors need a good sweep and scrub, as food debis was evident underneath the shelving.
108Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Significant grease build up was evident underneath the equipment, especially the deep fryers.
Corrective Action: This is not acceptable. It also acts as an attractant for pests. Pull the equipment out and clean behind.
