Observation: Open pots of soup sitting in the walk-in cooler on the floor. Observed active contamination of the soup during the inspection.
Corrective Action: Soup to be disposed during inspection
105Critical Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
Observation: Five large pieces of raw beef was found to be sitting at room temperature. They were completely thawed and at room temperature.
Corrective Action: New roasts will be thawed in the cooler and used. Affected roasts will not be used for customers.
108Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: No sanitizer is being used in the kitchen for cooking surfaces.
Corrective Action: Bleach sanitizer needs to be prepared and used today.

Observation: Walk-in cooler needs to be reorganized and cooked foods are found on the bottom and uncovered.
Corrective Action: Move cooked foods to the top and ensure they are covered.
