108 | Critical Repeat Improper Cleaning, Sanitizing of Equipment and Utensils Observation: Dish washing machine is not getting a chlorine residual. Corrective Action: Ecolab has been in to solve the problem since the last inspection, however there seems to still be a problem. I recommend checking chlorine residual on a daily basis and recording check as part of food safety plan. Until the machine is functioning properly - sanitize dishes in a solution of 100ppm chlorine. Call from Ecolab that dish machine now working (replace sanitizer line) - Good. |
