Observation: Temperature of sauces and foods in the inserts and drawers throughout the kitchen were maintained between 4-12°C.
Corrective Action: Potentially hazardous foods must be maintained at less than or equal to 4°C. (40F)
114 Improper Garbage Storage And/Or Removal
Observation: Water and food debris was ponding in the mop sink. Informed this is cleaned daily? Ponding water can be a source of contamination and attract rodents/flies.
Corrective Action: Must drain the mop sink and clean out the gross accumulation.
116 Improper Construction / Maintenance of Establishment
Observation: Floors were very slippery throughout the kitchen. This is a safety hazard for staff.
Corrective Action: Ensure grease is cleaned and mopped daily off the floors (use a degreaser on floors) can use non-slip mats but they must be lifted and cleaned underneath daily.
