Observation: Most of the restaurant is very clean. Some high shelves and the handles to the walk-in coolers & refrigerators were dirty.
Corrective Action: Clean as soon as possible. Most were done during inspection.

Observation: 2. Cardboard containers are reused to hold food or food related products.
Corrective Action: 2. Cardboard containers cannot be cleaned. Replace these containers with food grade containers.

Corrective Action: 1. Ensure all food containers are covered. Done.

Observation: Some shelving in the dry storage areas are of raw wood.
Corrective Action: Ensure all wood is finished with a cleanable surface by June 30, 2010.
