Observation: Review of temperature log indicates issues with walk-in cooler since March 9. Temperatures recorded at 8 - 12°C. Logging should have triggered a call for repairs. Food safety plan should describe appropriate response for critical issues.
Corrective Action: Continue logging temperatures and make note of any repairs or extraordinary actions required (i.e. move product to working cooler, call for repairs, etc.).
117 Food Handler Training
Observation: 1. No Food Safety Plan on site. 2. Meatball Food Safety Plan provided prior to last inspection no longer available.
Corrective Action: 1. Provide Food Safety Plan (for all locations) so company protocol;s are clear and can be researched and implemented as required. 2. As above, provide corporate Food Safety Plan so all food preparation protocols are readily accessible to all staff.
