Observation: The floors in the back kitchen area had dirt accumulation in the corners and under the icing sugar buckets.
Corrective Action: Ensure that equipment is pulled out and these areas mopped on a regular basis to prevent further accumulation.

Observation: Sanitizing concentration in the wiping cloths buckets was too low. (50ppm) The minimum concentration for the Quats sanitizer must be at 200ppm.
Corrective Action: Ensure that the concentrations are checked frequently and changed regularly and store wiping cloths in the buckets between uses for proper sanitation of food contact surfaces.
