117 | Food Handler Training Observation: Dishwashing. Corrective Action: Often new staff is first trained on dishwasher duty and some double checks are useful to minimize patrons receiving stained cups. ie: check for staining BEFORE placing in dishwasher and use spray arm and/or physical cleaning swipe if visible stain. I noted 5 of 11 cups in one tray had minor staining after the dishwashing and should be given a physical swipe and rewashing prior to service. Ensure staff is trained to check both pre and post dishwashing and before serving. |
