112 | Poor Sanitary Design, Construction, Installation of Equipment & Utensils Observation: The quats sanitizer at the three compartment sink takes a long time to feed through the line before it is dispensed. This is a concern if staff are not waiting long enough for sanitizer or testing to ensure it has dispensed at the correct concentration of 200ppm; there's a risk dishware is not being properly sanitized. Corrective Action: Recommend speaking to EcoLab rep. and suggesting a different placement for the sanitizer to ensure it feeds more conveniently and quicker. Also, staff must test the sanitizer concentration with a test strip to ensure it is at 200ppm. |
