301Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: (CORRECTED DURING INSPECTION) During the time of inspection it was observed that the concentration of the quatz sanitizer in sanitization buckets was less than 200 PPM (must be 200 - 400 PPM)
Corrective Action: Operator was told to refill the buckets with fresh batch of sanitizer and test it with the test strips to maintain the sanitizer concentration at 200 PPM. Sanitizer with improper concentration will lead to inefficient sanitization of the food contact surfaces. Unsanitary food contact surfaces may contaminate the other food being prepared on the same surfaces. The food contact surfaces must be cleaned and sanitized as often as necessary or at least for every 2 hours to reduce the risk of cross contamination.
307 Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Light fixture in kitchen area was not covered. When asked the operator mentioned that she has kept an order for them and is expecting them by the end of next week
Corrective Action: The operator was told to install a proper covering around the light fixture. Light fixtures in kitchen area must be covered in a manner that will reduce the risk of physical contamination to the food stored in it, in case of the breakage.
311 Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Improper coving was observed in walk-in cooler during the time of inspection leading to entrapment of food residues in the space between the walk -in cooler wall and the floor.
Corrective Action: Operator was told to get it repaired and thoroughly clean and sanitize the refrigerator unit. Unsanitary conditions may lead to cross contamination of the food products and may also attract the pests.
