Observation: Potentially hazardous foods including humus sauce was stored in the refrigeration unit.
Corrective Action: Ensure potentially hazardous food are stored under 4 degree Celsius by relocating the food to another unit until the refrigeration unit is able to maintain the required temperature of 4 degree Celsius or lower.

Observation: Internal temperature of a bottle of water located on the top shelf of the condiment refrigeration unit in the dining area was measured to be 5.1 degree Celsius. This bottle of water was stored at the outer edge of the shelf. Cold air temperature measured by a probe thermometer at the inner centre of the refrigeration unit on the top shelf was measured at 2 degree Celsius.
Corrective Action: Re-organization of the product may be required as the temperature measured indicates a lack of air recirculation from the inside to the outside of the refrigeration unit.
