302Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Low-temp dishwasher finial rinse cycle on dishes was measured at 10ppm (minimum 50ppm)
Corrective Action: Operator called the Ecolab maintenance person and he will come and fix it the next following day. In the mean time, operator will have dishwasher manually wash - rinse - sanitize (1 oz. bleach + 1 gallon of water provides at least 100ppm chlorine sanitizer and soak for at least 2 minutes) before running through dishwasher - Air Dry afterwards
