Observation:
1) The exhaust hood and filters had grease on them, and the sticker indicates it should of been professionally cleaned July 2017. Accumulated grease will attract pest and is a fire hazard.
2) There is food debris under the wooden storage unit. The food will attract pests.
Corrective Action(s):
1) Call a professional exhaust hood cleaning company to clean the exhaust hood system. Follow the frequency at which the company assigns on the sticker to ensure cleaning is done regularly.

2) Sweep and mop under the wooden storage unit today, this shall be done daily. If it is difficult to get a broom/mop undernead, physically move the storage unit OR use a vacuum cleaner.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -17C or colder; hot holding above 60C; and thermometers present.
- High temperature dishwasher had rinse cycle temperatur of 72C at the plate's surface, as per max/min thermometer.
- Bleach sanitizer in spray bottle has [Cl2] of 100ppm.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- FoodSafe certified staff present.
- Foods stored in food grade containers; covered; in groups with raw proteins below RTE foods; and 6" off the floor on shelves.
- No expired foods in use. FIFO rules followed.
- General sanitation is good. No signs of pests.
- Defrosting of food being done under cold running water.
