Observation (CORRECTED DURING INSPECTION): Note Code #308; main under-counter cooler was measured to be at approximately 11.4 C. Internal temperature of food in the cooler measured with probe thermometer at 4~5 C. Discussed possible defrost cycle but the temperature stayed around 11.4 for too long. All cold potentially hazardous foods must be stored at 4 C or lower at all times.
Corrective Action(s): Required operator to transfer all potentially hazardous foods to working cooler at 4 C or lower.

Observation (CORRECTED DURING INSPECTION): Observed vegetable dicer not in sanitary condition. Observed food debris and onion covers stuck on the tool
Corrective Action(s): Required operator to remove the dicer, clean and sanitize in the three compartment sink before use. Regular cleaning must be performed maintain sanitary condition of all equipment and utensils. Operator started to remove the item at the time of inspection

Observation (CORRECTED DURING INSPECTION): Hand-washing sink in the far corner by the cooking line did not have hand soap nor paper towel. When asked operator indicated that sink was not being used and staff wash hands at the dishwashing area. Hand sinks must be located in close proximity of cooking/prep area and must be used before and after new tasks to be done. Paper towel was missing at the hand washing station near the entrance to the kitchen (in the kitchen).
Corrective Action(s): Required operator to provide hand soap and paper towel at all hand washing sinks. Hand washing must be perfomed at designated hand sinks before and after new tasks

Corrective Action(s): Required operator to clean and sanitize all noted areas above. Ensure to perform regular cleaning.
