Observation: - Build up of mildew on the cover and inside the ice machine.
- Dirty wiping cloths on counter top.
Corrective Action(s): - Immediately drain the ice machine, clean/scrub and sanitize inside the ice machine using bleach concentration solution. Deep cleaning of the ice machine must be implemented as part of your Sanitation Plan.
- Store the wiping cloths inside the sanitizer solution while not in use.

Comments

- All handwashing stations are supplied with hot/cold running water, soap, paper towels.
- Surface sanitizer available in designated bucket at 100ppm bleach solution.
- High temperature dishwasher achieved 78.1C at the plate's level during the final rinse cycle.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity.
- Covid safety plan could not be found on site. Provide Covid Safety plan during the next follow up inspection.
- Better time stamping of foods (ie tapioca pearls) left at room temperature required.
Temperature control:
- All coolers at < or = 4C
- All freezers at < or = -18C
- Thermometers available in all other refrigeration units.
- Temperature log for coolers and freezers could not be found on site. Provide a daily temperature log during the next follow up inspection. Template provided via email.
