Observation (CORRECTED DURING INSPECTION): Wiping cloths for cleaning counters and other food contact surfaces are a source of contamination if they are not sanitized. There is no sanitizer being used today during inspection.
Corrective Action(s): 1. Immediately provide sanitizer on site such as plain domestic bleach. Corrected: Operator was able to find chlorine bleach.
2. Wash, rinse, sanitize, and air dry counters and food contact surfaces (use 1 tsp plain bleach in 1 liter water).
3. Store wiping cloth in sanitizing solution (1 tsp bleach in 1 liter water and change every 4 hours). Wear gloves to protect hands.
4. Empty and clean ice machine. Clean upper white tub above ice tray (during next cleaning).

Observation: Wiping cloth touching cooked noodles - could be a source of contamination. Cooked noodles are stored in a used cardboard box.
Corrective Action(s): Corrected: Cooked noodles that may have been contaminated with wiping cloth discarded during inspection. Store food in food grade containers that have been washed and sanitized prior to use. This will protect from contamination. Use a clean new paper towel or safe alternative to absorb grease if necessary.

Routine check.
Coolers (walk in cooler, prep cooler, bar cooler used for egg and other food storage) - temperatures are at 4C/40F or colder - good.
Deep fried breaded chicken or pork - made today, cooling in pans, and then to be stored in walk in cooler (4C storage required).
Defrosting - shrimp defrosted in walk in cooler.
***Chicken - defrosting in sink with cold water - change water more frequently and keep chicken in bags to avoid splashing. Clean and sanitize sink after use.
Hot holding - rice temperature today is at 140F or hotter. Thermometer is available for use by staff to verify temperatures. 60C/ 140F or hotter is required - ok.
Lettuce - reviewed washing of lettuce - using clean container with water, washing hands prior, and storing washed lettuce on top shelf of the walk in cooler - ok.
Cooked noodles - see above.
Food Safe certificate - Operator has a valid (<5 years old) Food Safe certificate and operator is on site - good.
Keep daily temperature records.
Hand washing - sink near cooking area often used for hand washing is blocked and is not accessible for hand washing - discussed with operator.
Hand washing can be done at the prep area double sink IF food is protected from contamination AND if staff take time to turn off faucet taps with paper towel. Liquid soap and paper towels are available at this sink.
Wiping cloths - there is no chlorine or quats sanitizer used to sanitize wiping cloths - see above.
There is no bleach or other sanitizer for sanitizing counters and food contact surfaces - see above.
Ice machine - see above.
Commercial dishwasher - final sanitizing rinse - hot water temperature measured inside of the machine using temperature test strip. Temperature reached 71C/160F inside of the machine. Final rinse gauge difficult to read but appears to have reached 82C/ 180F.
Some painting of prep area of kitchen has been done as well as some stainless steel wall covering installed in prep area - good!
Pest control - monitoring traps empty. Cleaning has improved (clean bottom shelf near dishwasher).
Pest control service has been contracted (checking inside premises as well as outside premises) - good.
