*paper towel dispenser is broken and has been ordered to be replaced tomorrow as per owner
Manual warewashing done at two compartment sinks, Quats sanitizer dispenser @200ppm; test strips in use
Walk-in cooler: 4C
Walk-in freezer: -10C
Savory pastry items are tracked on time card (discard time) and on new book
Temperatures and times are being tracked
No apparent signs of pest noted at time of inspection, service reports reviewed onsite and back door is closed
Permit is posted and staff is Foodsafe certified

*Note: renovation of floor and some structural upgrades are expected in summer. Floor plans are in the process of being submitted for review.
Discussed that all surfaces should be smooth, non absorbent and easily cleanable, including floors walls and ceiling. Any holes identified should be sealed to prevent pest entry.
