209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Two bags of onion were stored directly on the floor.
2. Small bowls were left inside the storage bins and used as measuring scoops.
Corrective Action(s): 1. Storing food directly on the floor can result in potential food contamination. Store food products at least 6" off the floor. Staff moved the onion bags from the floor and stored them on shelving.
2. Use proper scoops with handles to dispense food products from storage bins and store them in sanitary manner to prevent any risk of food contamination. Staff removed the small bowls from the storage bins at the time of inspection.

Observation: *REPEATED VIOLATION*
Walk-in freezer was measured at a temperture of -4C. Ice build-up was observed on the floor and water droplets were dripping from the ceiling of walk-in freezer.
Corrective Action(s): Repair/service the walk-in freezer to ensure that it is in good working order and able to maintain an ambient temperature of -18C or less. Please notify the district EHO once the freezer is repaired.

Observation: Hammer was stored in one of the drawers along with spatulas and spoons.
Corrective Action(s): Do not store hammer or any other equipment not intended for food premises operation on site. Storing hammer next to food contact surfaces could result in potential contamination of food contact surface.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature (coolers to be at 4C or less, freezers at -18C or less):
- Front pop cooler at 3C
- Walk-in cooler at 4C
- Walk-in freezer at -4C. See violation above.
- Prep cooler at 4C
- Stand-up cooler at 3C and freezer at -18C
- Temperature logs were maintained.
Keep them up to date.

Storage:
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash stations were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pail available and the concentration of bleach noted at 200ppm.
- Low temp mechanical dishwasher used for dishwashing purposes. The concentration of chlorine residual measured at 50ppm.
- Utensils and tongs were found in sanitary condition.
- General sanitation of the facility has improved.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate.

Note: At the time of inspection, it was noted that the ambient temperature of kitchen was a bit higher and humidity was building up. Please check the ventilation system of your kitchen and ensure that it is working properly.
