Follow up inspection conducted.
High temperature dishwasher has been repaired. A final rinse temperature of at least 71C was achieved at plate level on multiple cycles. Operator is to obtain a memory waterproof thermometer to monitor the final rinse temperature at plate level as the temperature gauge on the machine may not be reliant.
Ensure all equipment, utensils, bowls,dishware, and other food contact surfaces are rewashed and sanitized in the high temperature dishwasher.
Operator now has a monthly contract with a pest company to monitor and rectify pest problem. Pest report available at the time of inspection. Live traps setup within kitchen and potential entry points around piping have been seal.
Majority of the cleaning in the kitchen has been completed. More cleaning is needed around the grease trap, behind the cooking line, and shelving units.
