Observation (CORRECTED DURING INSPECTION): Bleach solution available in spray bottle at 100 ppm chlorine with no wiping cloths.
Corrective Action(s): Ensure wiping cloths are available next to all sanitizer bottles. Ideally all wiping cloths are soaking in a bucket of 100 ppm chlorine at all times during inspection and available when needed.

Observation (CORRECTED DURING INSPECTION): Large frozen shrink wrapped piece of beef thawing at room temp in a bucket on the floor.
Corrective Action(s): Ensure all frozen food is thawed in a cooler/ cooked from frozen/ or thawed in microwave. Do not thaw frozen foods at room temp. All food must also be stored at least inch off the ground in sanitary manner. Operator says the frozen meat will be used later today.

Observation: 1.Left wall of cook line has hose running through the wall of a larger hole.
2. Wall under electrical panel behind the back chest freezer is a hole in the lower wall
Corrective Action(s): Ensure all holes are sealed to prevent possible pest entry into kitchen.

Routine:
-Handsinks fully supplied with hot & cold water, liquid soap and paper towel
*Ensure all supplies and equipment are not obstructing the sink at anytime.
-High temp dishwasher noted at 72.7 C at the plate
-Prep cooler: 4 C
-Standing cooler: 1 door: 3 C / 2 door: 3 C
-Freezers: <= -18 C
-Rice: 62 C
-Sprouts in ice bath - water changed every 4 hours
-No cooling during inspection.
-No signs of pest activity noted during inspection - back screen door used during inspection
-Significant improvement in cleaning since last routine with the exceptions:
***Bubble tea prep area has spilt powder and splatter
-Fume hood has been cleaned
-General sanitation is satisfactory
-front pop cooler has been de-iced and the door now shuts.
-Buckets used for noodles appear to be food grade
-Permit posted
-Pipe in washroom has been repaired - no longer leaks
