209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Cake/pastry boxes are stored on the bottom shelves in the front service area very close to the floor where they can easily get contaminated.
2) Scoops are being stored directly in the dry foods with the handles touching the foods.
3) Some of the ceiling lights do not have sleeves.
4) Breads are stored directly on the floor of the walk-in freezer in the back. Some of them are uncovered.
Corrective Action(s): 1) Move the cake/pastry boxes higher up or protect them from contamination i.e. have them inside a bag or provide doors for the shelves.
2) When storing scoops in the dry food bins, ensure that he handles are always pointing up.
3) Provide shields/covers around the ceiling light bulbs
4) Do not store breads directly on the floor. Foods should be stored 6" above the ground. Cover/wrap up breads before storing in the freezer
