Observation: -Mouse droppings noted behind/under dishwasher and in area by back door.
Corrective Action(s): -Immediately clean up droppings and santize areas. Traps present which were placed by Pest Control technician. Operator unable to provide report for services at the time of the inspection. Fax or email to the undersigned and in future keep on-site.
Continue to monitor for further activity and clean up droppings immediately when noted. Continue to fill/seal holes any holes that are noted.

Comments

-General sanitation of premises was satisfactory and has improved since previous inspections. Stove requires some cleaning to remove build up.
-Handwashing sinks supplied with liquid soap and paper towel
-Cooler temperatures were acceptable:
-Sliding door cooler (kitchen) 3C
-Small prep cooler 4C
-Sliding door cooler (front) 4C
-Freezers were -9C to -15C. Food was maintained in a frozen state. *One (1 door stainless) freezer present which is not operational and not in use to be removed from premises.
-Hot holding of rice was 78C (minimum 60C)
-Observed food safe cooling practices. Curry was portioned into small containers to allow for rapid cooling.
-Dishwasher met sanitizing requirement. 100ppm chlorine residual detected on dish after cycle. Operator has test strips to check sanitizer concentration.
-Bleach sanitizer solution (100ppm) present for sanitizing food contact surfaces.
*New shelves which were added to shelving unit require painting/sealing so that the surface is smooth, non-absorbent and washable.
