Observation: Required completion, repair or replacement:
1. Floor is starting to peel in a some parts of large prep room, long narrow room and Urge chocolate prep room
2. New spice prep area - floor slanted away from centre of room and floor drains.
3. Light required above spice prep table
4. Ceiling starting to peel in all 3 rooms
5. New wall installed in narrow room - inside storage room requires paint/ complete sealing walls.
6. Exposed water pipes in narrow room above spice prep area
7. Hole in wall between walk in cooler and freezer to outside
Corrective Action(s): Ensure all surfaces are completed and in good condition. Smooth, durable, easy to clean and non-absorbent.
1. Refinish flooring - operator says floor will be re-done by summer 2018.
2. Level flooring and slant toward floor drains.
3.Install adequate lighting above spice prep table
4. Refinish ceiling - operator says ceiling will be re-done by summer 2018
5. Paint and seal walls of new additions to narrow room.
6. Enclose all pipes to protect food and allow for easy cleaning
7. Seal all holes and gaps to outside - operator plans to complete the installation of a pump and needs access to outside. After installation the hole will be sealed.

Comments

- Handsinks supplied with liquid soap, paper towels, hot and cold water.
- Freezers in use: <-18 deg C
- Coolers in use: <4 deg C
- Food storage practices appear satisfactory - food is protection from contamination.
- 200 ppm chlorine bleach solution in spray bottles in processing areas.
- No other signs of pest activity noted during inspection
- General sanitation of premises appears satisfactory.

- Equipment and changes have been made to floor plan since last inspection

Note:
-No food production at time of inspection.
-Walk in cooler has been repaired - bad smell developed in closed cooler during shutdown - operator will air out unit and leave baking soda in unit to absorb odors before full operation of cooler
