Observation: Wash temperature at dishwasher too low at 102F. Manager stated repair individual will be coming in the next 48 hours.
Several lights in fluorescent light fixtures not working. Manager stated repair individal will be coming in the next 48 hours.
Install additional shelving in back room area. Bottom shelf must be at least 6in up off the floor to allow the floor to be cleaned below the lowest shelf in the event of food spills. Shelving must be smooth and non absorbant. If wood is used the wood would need to be sealed.
Quat test strips not on site.

Corrective Action(s): Once repaired ensure wash water is being dispensed at a minimum of 120F
Purchase quat test strips to verify that a minimum of 200ppm quat is present for the sanitizing cloths.

Observation: Wiping cloths observed being stored on the counter at all work stations
Correction: Store wiping cloths in containers of quat sanitizer at 200ppm when not in use (Fully submered) and change the sanitizer every 2 hours.

*Back room area cannot be used for any food prep, only the kitchen as a hand wash station is required. Space is potentially available in the back room area but a technician will need to be consulted to ensure premises has met minimum washroom requirement's for the public.
