Observation (CORRECTED DURING INSPECTION): A large pot of cooked masala was cooling over night. Internal temeprature meaured 46.1C. Product discarded at this time. All potentially hazardous foods must be cooled from >60C to 20C within 2 hours and 20C to <4C within 4 hours.

Observation (CORRECTED DURING INSPECTION): (Repeated violation) The following items were discarded due to time and temperature abuse (internal temperature measured 8-9C):

- 1 full tray of veggie pakora
- 1 container of cooked pasta

Observation: (Repeated violation). 1. The walk in cooler's ambient air temperature measured at 8C. Observed 4C after the temperature adjustment.
2. Right side of pizza assembly cooler measured at 8C. Products in this cooler are either discarded or relocated to a working cooler.
Corrective Action(s): 2. Discontinue use of right side pizza assembly cooler until it is serviced by a technician and the temperature is verified by the district health inspector.
