Observation (CORRECTED DURING INSPECTION): Stirring spoon stored in container with ice was too close to the hand sink.
Corrective Action(s): Find another area to store this, away from the hand sink.

Observation: An open wall tile was created when the egg station was installed.
Corrective Action(s): Close off this open part of the wall. Ensure material used is non-porous and washable.

Comments

Hand wash stations supplied with liquid soap and paper towels.
Sanitizer solution in buckets measured 200 ppm (quats).
High temp dishwasher reached 73 deg C at plate surface.
New station created for fresh cracked eggs.
Under counter cooler for storing just eggs registered at 4 deg C.
Temperature checks:
- Walk in cooler (for bottled drinks - soda,water,juice) was at 7 deg C.
- Walk-in freezer was at -18 deg C ambient temp.
- Walk-in cooler for dairy and other potentially hazardous foods was at 3 deg C ambient temp.
- Hot holding for: soups was above 64 deg C; chicken/eggs was 65 deg C; potato wedges was 60 deg C.
Temperature (digital) log was available and up to date.
Monitor sandwich prep cooler closely and keep lid closed when not in use.
Food products were stored off the floor and covered.
Some flies noted in the staff break room. Pest control devices for flies installed (contract pest inspection done monthly).
Employees were wearing clean uniforms and hair restraint (visor & hair nets).
Continue to practice good hand hygiene and change gloves when switching tasks after washing hands
Washrooms' cleanliness and general sanitation was satisfactory at time of inspection.

Note on COVID:
Employees still wearing face masks and POS barriers remain in place.
