Follow-up inspection:

-Operator has revised Food Safety Plan to emphasize infractions from last inspection -keep a copy onsite for review with workers especially new workers
-All perishable foods are now time stamped when brought out at room temperature with a holding time of maximum 4 hours -afterwards these foods are to be discarded -only portion as much food that will be used within this allotted period
-In-use utensils are dishwashed every 2 hours as per operator (maximum allowable is 4 hours)
-You as the manager and myself should be able to assess how long these perishables have been out at anytime during the day
-No foods stored under sinks
-No obstructions observed in designated handsinks
-backscreen door observed shut tight at time of inspection
-areas requiring cleaning -water tank area, wall area next to washer, floor area in walk-in cooler have been cleaned and appears disinfected
-daily log sheets maintained for fridges and washer
