Coolers (domestic coolers in kitchen and also the resident fridge in dining area) - all at 4C/ 40F or colder - good.
Hot holding - not observed.
Cooking - eggs fully cooked. Roast beef is fully cooked.
Foods are from approved sources.
Produce - reviewed washing of melons prior to cutting.
Lettuce is washed with clean running water and dried in spinner.
Food safety plan - available on site - good.
**Keep daily temperature records.
Food Safe - Kitchen manager on site today has a valid Food Safe level 1 certificate (Expiry Oct 2023). Take refresher course to renew certificate before it expires (www.foodsafe.ca).
Hand washing sinks in kitchen and in dining area for residents - have hot/cold water, liquid soap, and paper towels in dispensers.
Non-latex gloves also available.
Cleaning - ok.
Reviewed use of sanitizers (cleaner sanitizer requires 30 second contact time and a potable water rinse on food contact surfaces).
Chlorine bleach in spray bottle is >400ppm. Use 1/2 to 1 tsp domestic bleach in 1 liter of water (made fresh daily) to sanitize wiping cloths and can also be used to sanitize counters etc.
Wash-rinse-sanitize-air dry - Poster is posted.
Sanitation plan - ok.
Domestic dishwasher - ok (NSF approved and sanitizing cycle used each time).
