Observation (CORRECTED DURING INSPECTION): Meat slicer had food debris in the hard to reach areas, not used today.
Corrective Action(s): Ensure the meat slicer is properly washed and sanitized to remove all food debris after use.

Observation: 1. Foam strip filling in the gap of the door of the walk in cooler still has a gap at the top allowing air to escape.
2. Ventilation hood is broken, requiring back door to be open to help with grease in the air and build up of grease in the hood which is dripping down.
Corrective Action(s): 1. Ensure the door is either replaced, or repaired properly to ensure the air gap fully sealed when the door is closed and can with stand repeated door openings and water on the bottom from washing the floor.

2. Ventilation hood is to be repaired today. After repaired ensure all areas receive a good cleaning including the hood to remove any dripping grease or build up of grease on surfaces from being in the air. Monitor for pest entering while back door is open.
