The following items have been observed:

-->Sushi display cooler is noted at 3.9oC
-->Handsinks are free of items and paper towel present at all handsinks
-->Most foil and cardboard have been removed
-->Area under cooking line is now in sanitary condition

Still outstanding:
-->Cleaning is still required on ventilation exhaust filters (clean more frequently if required)
-->Cleaning is required on shelving racks in walk-in cooler, and floor behind and around chest freezers
-->Foil is noted in two small areas at cooking line. Ensure foil is removed as all surfaces must be durable, easily cleaned, and impervious to moisture.
