Observation: Plastic ice scoop has crack in handle which is covered in tape.
Corrective Action(s): The presence of cracks and/or tape do not allow for proper cleaning and sanitizing. Obtain a new scoop that is suitable for its intended purpose and easy to clean and sanitize. Date to be corrected by: Today.

Observation: Under counter freezer is turned off at the time of inspection and technician is on site. Freezer is unable to maintain temperatures of -18 degrees C or less. No potentially hazardous food items stored inside freezer.
Corrective Action(s): Ensure freezer is able to maintain temperatures of -18 degrees C or less. Date to be corrected by: February 26, 2018.

Comments

Routine inspection conducted:

- Coolers at 4 degrees C or less
- Reach in freezer at -18 degrees C or less
- Hot holding internal temperatures at 60 degrees C or more
- Probe thermometers are available
- Hand washing stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Three compartment sink is set up for manual warewashing--quaternary ammonium compounds (quats) sanitizer measured at 200 ppm in third compartment
- Wiping cloths stored in labeled bucket with sanitizer at 200 ppm quats. Quats test strips are available.
- Discussed cleaning and sanitizing of equipment--satisfactory. Staff noted blenders are sanitized every few hours.
- No evidence of pest activity noted. Note: Pest control records are not available on site, however, management stated that the premises is serviced by a pest control company on a monthly basis.
- FOODSAFE requirements met at time of inspection
- Temperature records are maintained and available on site
- Permit is posted in a conspicuous location

1. Please include front preparation cooler (condiment cooler) in temperature records. Current records do not account for this cold holding unit.
2. New blender lids have been obtained since previous inspection, according to management.
